Countdown to Christmas Day 19: White Chocolate Peppermint Cake


Happy Dec 19th! I am running on EMPTY right now. These last 48 hours have been extremely hectic baking, babysitting, sleeping for 2 hours, running 10 miles, re-baking the cake above...we will get to this story in a minute, attending a Christmas Party, singing Christmas songs, and now typing up this blog post. It has been a whirlwind weekend so far and I'm looking forward to getting some much needed sleep tonight. But before I go rest my head I need to give you the history behind this White Chocolate Peppermint Cake.

I woke up bright and early yesterday morning at 5:45AM to start my baking for the Christmas Market and Parade today. I baked 5 dozen cupcakes and decorated them as snowmen and reindeer, made 100 chocolate covered brownie lollipops with sprinkles, made 3 batches of white chocolate pretzel bark, made 1 batch of peppermint bark, and a huge batch of homemade hot chocolate mix....as well as made the cake above the FIRST TIME. All of my baking was finished, only some decorating left to do and I decided I wanted to go take a run to get out of the kitchen for a few minutes. As I'm in my bedroom changing into my running clothes, I hear some commotion going on in the kitchen, I walk out to find my dog...yes the big black lab I showed you a few days ago with his honey love biscuits....eating my peppermint cake right off of the counter...front paws perched up half of one cake layer has been devoured and crumbs are all over the floor. I couldn't believe my eyes...never has my dog ever grabbed for sweets off of the counter before. I was filled with anger, didn't know what to do, I knew I was pressed for time and didn't think I would be able to remake the cake, allow for it to cool, make the icing and decorate it all before the Christmas Party I was planning on taking the cake too. So I continued to go for the run as planned, cleared my head and put together a game plan to come home and remake the cake a 2nd time. I whipped together another batch of the peppermint cake....let it cool and then had to leave to babysit. Got home from babysitting around 1:00AM...knew I had to wake up and run at 5:00AM, be at the Christmas Market from 9:00AM - 3:00PM...and the Christmas Party that this cake was going to started at 5:00PM....so I was contemplating...it is 1:00AM do I ice the cake now....or wait until 3:00PM tomorrow and rush to ice the cake and hope everything goes well to pull this off before the 5:00PM party...are you following me? Me being the crazy person that I am decided to deprive myself of the maximum 4 hours of sleep I knew I was going to get and go ahead and ice the cake at 1:00AM this morning....so I made the icing...following the directions which called for 9 cups of powdered sugar...I thought this was a lot of sugar....it said to add the sugar gradually so I was adding it by 2 cups at a time...I got to 6 cups and the consistency of the icing looked perfect for spreading, but I decided to go ahead and add 2 more cups, afterall the recipe called for 9 cups...and this is when disaster struck...the icing consistency became too stiff and I knew right then and there it wasn't going to be spreadable for the cake that I had already made 2 times. I was determined that I was going to get this icing to work, I took my offset spatula and tried to spread the icing on my four layer cake and it just wouldn't budge...it was way too stiff. It was now after 2:00AM and I didn't know what to do...I decided there wasn't much I could do at this point so I went to bed and decided in the morning I would figure out a new plan. I woke up 2 hours later rushing out the door to run and then headed straight to the holiday market. My new plan was going to be to re-ice the cake after the market and before the party...afterall I was not going to let this cake defeat me because I had already baked it twice at this point. So I came home and made another batch of the icing stopping after 6 cups confectioners' sugar this time, and it was perfect. The consistency was spreadable and the icing turned out so smooth on the cake. Finally, this peppermint cake I was so determined to make was a succes, after 2 rounds of baking and 2 rounds of making the icing! I mean afterall, the main reason I wanted to make this cake was for the peppermint stick and red ribbon decorations on the outside. This is one of the most festive cakes I have ever seen and I thought it would be perfect for a holiday party! I first discovered this cake idea last year in Paula Deens's Nov/Dec magazine issue.

So I just got back from the Team in Training Christmas Party where I took this cake for dessert and it was a huge hit. Everyone raved about how cute it looked with the peppermint sticks and about how delicious it tasted! I am so glad, that I didn't let this cake get the best of me and that I worked through the dilemmas I faced and made sure I came away with a final cake that I was proud of.


This cake is actually made from two 9-inch cakes and then each layer is sliced into two to create a 4-layer cake. Look at those specs of peppermint in the cake layers...it looks like layers of red confetti. Peppermint extract was also used for flavoring...this was such a refreshing cake and very moist.


Here's round 2 of the iced cake. Look how smooth the texture of the icing is, and so much easier to ice than the first time. Yes, I acutally peeled off all the original layer of icing from my first batch since it was so stiff and barely even spreadable.


Decorating cake with peppermints sticks. I just love the red & white swirl of the sticks, the red adds such a bold punch of color.


I found these Sweet Stripes peppermints in the checkout isle at Walmart...it took 4 bags to go around the entire cake.



White Chocolate Peppermint Cake (Paula Deen, Nov/Dec 2008 Magazine issue)

Ingredients

1 cup butter, softened
2 cups sugar
4 large eggs, separated
1/2 teaspoon peppermint extract
3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cups heavy whipping cream
1/3 cup sour cream
1/2 cup crushed peppermint candies

  • Preheat oven to 350 degrees. Spray 2 (9-inch) round cake pans with nonstick baking spray.
  • In a large bowl, beat butter and sugar at medium speed with an electric mixer until creamy. Add egg yolks, one at a time, beating well after each addition. Beat in peppermint extract.
  • In a medium bowl, combine flour, baking powder, and salt. Gradually add to butter mixture, alternately with cream, beginning and ending with flour mixture, beating just until combined after ead addition. Stir in sour cream and crushed peppermints, just until combined.
  • In a medium bowl, beat egg whites at high speed with an electric mixter until stiff peaks form. Gently fold into batter.
  • Spoon batter evently into prepared pans. Bake for 26 to 28 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks. Wrap cake layers in heavy-duty plastic wrap, and chill for at least 1 hour or up to 24 hours.
  • Using a serrated knife, cut each layer in half horiontally to make 4 layers. Place 1 layer, cut side down, on a cake plate; spread with 1/2 cup White Chocolate Frosting. Repeat procedure with remaining 3 layers. Spread sides and top of cake wiht remaining frosting. Garnish with peppermint sticks if desired.
White Chocolate Frosting

Ingredients

8 (1 oz) squares white chocolate
3/4 cup heavy whipping cream
3/4 cup butter, softened
1 teaspoon vanilla extract
9 cups confectioners' sugar (I found 6 cups was plenty!)

  • In a medium bowl, combine white chocolate and cream. Microwave on High in 30-second intervals, stirring between each, until chocolate is melted and smooth (about 1 1/2 minutes total). Let cool completely.
  • In a large bowl, combine chocolate mixture and butter. Beat at medium speed with an electric mixer until creamy. Add vanilla, beating until combined. Gradually add confectioners' sugar, beating until smooth.
This cake definitely tastes as good as it looks and it was well worth the troubles I went through to finally come away with a successful and yummy cake!

Countdown to Christmas Day 18: Rudolph the Red Nose Reindeer Cupcakes


Check out these super cute Rudolph the Red Nose Reindeer cupcakes I made to sell at the Christmas Parade this weekend!



Make a batch of cupcakes and ice with chocolate frosting. Squeeze out an extra dollop of chocolate frosting for the nose and then place a red M&M on for Rudolph's red nose.


Next add Rudolph's eyes by taking a mini marshmallow and ripping it in half to create the whites of his eyes. Stick a mini chocolate chip on each marshmallow to make his brown eyes.


Andy finally take some pretzels and break them apart to create Rudolph's antlers! What a fun activity to make these reindeer cupcakes with your kids...they could leave these for Rudolph when Santa comes next week to deliver their presents!

Countdown to Christmas Day 17: Peppermint Bark


Happy Dec 17th! Today's sweet treat is Peppermint Bark! Chocolate and peppermint, what a great combination! Every year at Christmas time you always see this famous peppermint bark in Williams-Sonoma, so I figured I would re-create it in my own kitchen! Look how good those layers of dark and white chocolate look with the crushed peppermint sprinkled on top! This is definitely a must have holiday treat!


First you melt your dark chocolate and spread it out on a waxed paper lined baking sheet and allow to set up. Then melt your white chocolate and spread on top. And finally, sprinkle the white chocolate layer with the crushed peppermint! It's as easy as 1, 2, 3!


Peppermint Bark

Ingredients

3 cups good quality chocolate chips
12 oz good quality white chocolate chips
1/2 teaspoon peppermint extract
1/2 cup crushed candy canes

  • Crush candy canes, enough to yield 1/2 cup and set aside.
  • Melt chocolate chips in a double broiler or microwave. Pull off heat while there are still some lumps remaining and stir until smooth. Pour melted chocolate onto cookie sheet and spread out to thickness desired. Let harden.
  • Melt white chocolate chips. Add peppermint extract. Let cool a bit and then pour over top of hardened chocolate layer and smooth.
  • Sprinkle crushed candy canes on top and very gently pat them into the white chocolate. Let harden.
  • Break apart bark.

Countdown to Christmas Day 16: Candy Wreaths


Happy Dec 16th! Today's holiday treat doesn't require any baking what so ever but it does require a little bit of patience! Candy Wreaths are a super cute and fun way to decorate your house for the holidays and enjoy a sweet treat at the same time...you can't help but peel the candy off the wreath one by one and eat a piece, or two, or maybe three everyday. After all, these wreaths are made to be enjoyed too not just for looks.

I first discovered candy wreaths when I was a little kid. My cousin Betsy would get a candy wreath every year at Christmas time with all kinds of assorted candy on it and I thought it was the coolest thing. My favorite candy to eat off the wreath were the Brach's Nougat...which are basically a soft round taffy like peppermint that is red & white striped with a green Christmas tree in the middle. Those candies just melted in your mouth, they were so good!

Last year I wanted to see if I could make my own homemade candy wreaths so I started to do some research online to see how they were made. Sure enough, I came across a YouTube video of a lady demonstrating making a wreath. For step by step instructions to make your own wreath check out this video. All you need are a few simple materials that you should have around your house and your favorite type of candy.

I made 6 different varieties of wreaths that you can see from the photos below and they all turned out so cute! I sold some in a fundraiser and gave away some to friends and family.

Countdown to Christmas Day 15: Honey Love Dog Biscuits


Happy Dec 15th! Wow, I can't believe Christmas is in 10 days, I'm so excited! And at this time next week I will be in the car starting my 11 hour, 725 mile drive from Mobile, AL to my hometown which is at the very northern tip of KY to see my family for the holidays! Since we will be in the car for a VERY LONG time and we will have our 110 lb black lab, Tillman with us for the ride, I wanted to make him a very special treat for our trip. After all, it is the holidays and we can't forget about our four-legged friends, even they need some Christmas cookies!


So for those of you that LOVE your dogs, bake them a batch of these Honey Love Biscuits, they will absolutely go crazy for them! Last year I bought this container of dog biscuit recipes and cookie cutters to put in Tillman's stocking. When I saw the cute little boxes filled with dog goodies I just couldn't resist...I mean how cute are the fire hydrant, dog bone and heart shape cookie cutters? I knew Tillman would love these.


So last Christmas was the first time I made these treats for Tillman, when I was in KY at my mom's house. I have continued to make them several times throughout the year for him as well. But now that I am in the middle of baking all of my holiday cookies for family, friends and neighbors, I wanted to take a break and make something special for my dog too.


This recipe is extremely easy and it makes a ton of treats so you can keep them for your own dog or put some in a bag tied with a bow and pass out to all your friends that have dogs.


Here's my big old boy, Tillman...right now I'm tempting him with a honey love biscuit. I'm a mean mom, I knew the only way he would keep those reindeer antlers on is if I held a biscuit over his head and bribed him. But sure enough my plan worked, I was able to get a semi-decent photo of Tillman with antlers, in front of our Christmas tree with the biscuit. Now that takes some quick skills, because Tillman gets so hyper whenever he knows he is about to get some treats!


Tillman just ate his first honey love biscuit and is smiling from ear to ear because it was so yummy!



Honey Love Dog Biscuits

Makes 2 to 3 pounds biscuits

Ingredients

2 1/2 cups whole-wheat flour
1/2 cup soy flour or white corn flour
1/2 cups nonfat dry milk
6 tablespoons vegetable shortening
1 large egg
1/2 cup honey
1/2 cup fresh beef or chicken broth, or sufficient for processing

  • Position rack in the center of the oven and preheat at 350 degrees. Have two ungreased baking trays ready.
  • In a large bowl, using a fork or wire whisk, combine the two flours and dry milk. Using a pastry cutter or two knives, cut in the shortening until the mixture resembles fine crumbs.
  • In a small bowl, using a wire whisk or electric mixer on medium speed, beat the egg until foamy before beating in the honey and broth.
  • Using a large spoon, a spatula, or your hands, combine the mixes, blending until mixture pulls away from the sides of the bowl and forms a soft dough.
  • Turn the dough onto a lightly floured flat surface, and using a rolling pin, roll it out to 1/4 to 1/2 inch thick. Using the cookie cutters provided in this kit, cut out as many biscuits as you can, reworking the scraps as you go. The dough will become very stiff as it is reworked.
  • Place the biscuits side by side on the baking trays and bake for 18 to 20 minutes or until the biscuits appear very dry and the edges are light golden brown. Remove the trays from the oven and cool to room temperature. Turn off the oven.
  • When the biscuits have cooled completely, put all of them on a single baking tray and return them to the cooling oven. Leave them undisturbed, without opening the oven door, for 8 to 16 hours.
  • Please Note: Some dogs may be allergic to corn-based products. Biscuits also contain honey.
Your dog is going to love you if you bake these for them!

Countdown to Christmas Day 14: Rice Custard over Vanilla Ice Cream


Happy Dec 14th! You are in for a treat with the recipe for today! It is for my Grandma Owsley's (dad's mom) or as the grandchildren call her "Granga" recipe for Rice Custard. As long as I can remember I have been enjoying this sweet indulgence every Christmas at my grandparent's house in Elizabethtown, KY. After we are stuffed full from my grandma's homecooked Christmas dinner and homemade Granga bread, we open presents and relax awhile watching Christmas movies...and then it is time for her famous rice custard along with all other kinds of fabulous homemade desserts like blackberry jam cake, Italian cream cake and peanut butter fudge. In less than two weeks I will be reliving this wonderful Christmas tradition again with my dad's side of the family.

So tonight I made an honest attempt to re-create her custard recipe. Too bad she wasn't standing beside me in the kitchen helping me every step of the way. I was lucky enough though to have her show me how to make her homemade biscuit recipe about a year ago, so I will definitely have to share those with you another time as well, but let's get back to the rice custard for now.


First you mix all your ingredients of sugar, cornstarch, salt, egg yolks and milk together to thicken over water on the stove.


Then you prepare an ice bath too cool the custard mixture.


Strain the custard.


Add in the rice.


Cool custard over chilled water.


Pour custard into glass jar and place in refrigerator to chill until ready to serve.

Grandma Owsley's Rice Custard

Ingredients

1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
4 cups milk
4 beaten egg yolks
2 teaspoons vanilla
1/2 cup white rice (cook as package directs)

  • Mix sugar, cornstarch and salt in bowl. Add milk and egg yolks.
  • Cook mixture in heat proof pan over boiling pot of water on stove until it starts to thicken, about 30 minutes.
  • Remove pan from stove and strain custard mixture into a bowl.
  • Stir in the rice.
  • Place bowl of custard in a pan of ice water to cool.
  • Add vanilla.
  • Chill custard in refrigerator until ready to serve.
  • Makes 1 quart.
  • For an extra special treat serve rice custard over top of a bowl of vanilla ice cream...YUM!

Countdown to Christmas Day 13: Hershey's Kisses Peanut Butter Blossoms


Happy Dec 13th! I can't believe the weekend is already over and its time for Monday again! So to start the week off right I wanted to bake a batch of another one of my favorite Christmas cookies...Hershey's Kisses Peanut Butter Blossoms. I just love the combination of peanut butter and chocolate.


Start off by unwrapping one of the best pieces of chocolate ever, Hershey's Kisses.


Prepare the peanut butter dough, roll into balls and coat in sugar.


Bake the peanut butter balls and immediately after you pull them out of the oven, place a Hershey's Kisses in each of them. The warmth of the dough allows the kisses to set to the cookie. If you pop one of these in your mouth while they are still hot, the chocolate just melts in your mouth. Delicious!


I love the sparkle of the sugar crystals on these cookies.

Hershey's Kisses Peanut Butter Blossoms

Ingredients

48 Hershey's Kisses Milk Chocolates
1/2 cup shortening
3/4 cup creamy peanut butter
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
granulated sugar

  • Heat oven to 375 degrees.
  • Remove wrappers from chocolates.
  • Beat shortening and peanut butter in large bowl. Add 1/3 cup granulated and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into mixture.
  • Shape dough into 1-inch balls. Roll in sugar; place on ungreased cookie sheet.
  • Bake 8 to 10 minutes or until lightly browned. Immediately press a KISSES Chocolate into center of each cookie. Remove from cookie sheet to wire rack. Cool completely.
  • Makes about 4 dozen cookies.
