Strawberry Lemonade Cupcakes in a Jar


Well its officially summer and oh so very hot here in Mobile, AL! I don't know about you, but on a steamy summer afternoon nothing tastes better to me than a fresh squeezed glass of lemonade! With my fruit basket overflowing with lemons I decided why not turn my favorite summer drink into a cupcake.

Artwalk Interactive Rainbow Cake & Cupcakes

I have been wanting to make a rainbow cake for a while now, and this week I finally had the opportunity to play with red, orange, yellow, green, blue and purple cake batter!

I made a 6" round 6-layer cake...


And 100 ROYGBP cupcakes. I LOVE these VIBRANT colors!

Each cupcake was topped with a white fondant circle to be decorated as part of an artwalk celebration. The idea for a "decorate your own" cake & cupcakes came from the talented Rosie of Sweetapolita.

Here is the final display I designed for the 6th annual LoDa Artwalk. The cake and cupcakes were displayed at wellbornIdeas as part of an "interactive" display.

People who visited the gallery were invited to grab an edible marker and decorate their "blank canvas" on top of their cupcake.

Here's a look at the final 3 tier cake prior to being decorated by local artists as well as members of the community. The bottom two tiers are dummy cakes and the top tier is the ROYGBP cake! To play off of the scalloped edge of the cake pedestal I thought it would be fun to create a scallop rim around each tier of cake in the rainbow colors to tie in with the theme.

Here is Ashley, one of the featured gallery artists for the evening putting her artistic talents to work on the bottom tier of the cake...looking good!

I love how she used the scallops and turned them in to owl eyes, I would have never thought of that...so creative!

It was so cool to see a variety of creative minds coming together with their artistic contributions to the final cake!

Even the little ones got in on the fun!

Honey Cupcakes with Honey Cream Cheese Frosting & a Giveaway!


Today is an exciting day for several reasons...

First off, I want to say a HUGE thank you to Carrie at Half Baked for asking me to be a monthly contributor on her blog to share new cupcake recipes with all her readers! The day I received her email I was both shocked and excited! Shocked, that out of all the bloggers out there, especially cupcake bloggers, that she chose me to contribute to her blog. WOW, what an honor! And excited because Half Baked is truly one of my all time favorite cake blogs! It was one of the first blogs I ever started following and one that I am always eager to check out each day to see what new cakes Carrie will feature. She truly has an eye for all the new cake trends and showcases some of the most gorgeous cakes I have ever seen! So thank you Carrie for this opportunity, I am truly grateful!

So to kick off summer I came up with some Honey Cupcakes with Honey Cream Cheese frosting, which were inspired after sampling some local honey from our farmer's market!

Bumble Bee Baby Shower


This past weekend I was buzzing around like a busy bee in my kitchen. My good friend Kelly who I have mentioned here on CIS before was hosting a baby shower, instead of being the guest of honor herself as you may remember here. The theme was bumble bees, adorable! I had never decorated anything with the bee theme before so immediately I started envisioning yellow & black, polka dots and of course little bees everywhere. Kelly requested cupcakes and cake balls/pops and then some sugar cookie onesies and baby bottles for the favors.

Drawing inspiration from polka dot ribbon and cupcake liners I added some dots to the yellow onesie cookies. My first instinct was to decorate the cookies with black stripes so they would more closely resemble a bee, but after trying this on one cookie it quickly reminded me too much of Charlie Brown...so I scratched that idea and proceeded with polka dots.

I hope you enjoy all the pictures of the bumble bee sweets...I got a little carried away BEE cause everything was so cute! I have some exciting news at the bottom of the post too that I can't wait to share with you!

The bee cupcake toppers were made from yellow fondant rolled into an oval with two slivered almonds poked into the sides. The stripes and eyes were piped on using black royal icing. I used a round tip 1A to pipe on 4 swirls of icing to resemble a bee hive.

I am going to be a monthly blog contributor to Half Baked. If you have never heard of Half Baked before and you are as big of a cake lover as me...well I don't know where you have been! Half Baked is seriously my go to blog for cake inspiration! It is filled with some of the most gorgeous and unique cakes I have ever seen. Carrie, the founder and editor of Half Baked is a cake designer herself and also features some of the most talented cake vendors in the industry. Whether a cake for a birthday, shower or wedding, no matter the occasion I am always blown away by the creative cakes and decorating techniques seen on Half Baked! This blog is truly one of my all time favorites, and one I have been following for almost two years now. I am so honored that Carrie has chosen me to be part of her blog. My new gig will involve creating monthly cupcake recipes and photos to share with all her readers, and I can't wait! I am looking forward to sharing my first cupcake flavor later this month, so stayed tuned!

Trucks & Turtles


One of my friend's and repeat customers asked me if I could bake something for both her son and daughter last week. It was her son's birthday and she wanted some red dump truck cookies for him to take to school and share with his friends. Last year I got to make a birthday sweet for him too, do you remember this John Deere cake?

I love getting the opportunity to bake year after year for the same kids. It's fun to see how their interests change over the course of the year and what the hot new toy trend is as they grow up.

I made this turtle pull apart cupcake cake for Matthew's older sister Alex for her Save the Turtle cakewalk at school.

This turtle cake was made using 12 cupcakes and would be such a fun project for kids.

-To create the body of the turtle place one cupcake down and then surround it with 6 cupcakes to create a circle.
-Then place 2 cupcakes at the back of the circle for the legs and 2 cupcakes at the front of the circle for the arms.
-Place the final cupcake at the top of the circle in between the arms for the head.
-Frost all cupcakes using green icing.
-To create the shell use some lime green tinted fondant (or whatever color you prefer). Cut out circles to place in the center of each cupcake that make up the body of the turtle. Roll out a long rope of fondant and gently place around the edge of the turtle body to create the border of the shell.
-Add some candy eyes, nose and mouth for facial features.

Black & Teal Wedding Cake & Cupcakes

Happy Friday! So glad the weekend is finally here! I'm going to keep this post short and sweet because 1) Its been a LONG week & I'm tired, 2) I've got more baking to do for a couples shower/crawfish boil tomorrow and 3) Randolph just put some ribs on the grill with his "special dry rub" seasoning so dinner will be ready shortly! So I will leave you with some photos of a wedding cake and cupcakes I made for a reception last weekend.

Tracy, the bride sent me some great photos for inspiration to work with when designing her cakes and cupcakes inspired by the napkins she was going to use at her recption. I just love the black and teal theme!

I used royal icing to pipe on the swirls and squiggles.

Tracy bought the cupcake tower online and then covered each individual tier with a black damask wrapping paper and covered the edges in teal ribbon. This is a super easy DIY project and very affordable and easy to assemble! I decorated each cupcake with 4 black fondant flowers and silver dragees. The flowers were made using this daisy flower plunger from Layer Cake Shop.

Congratulations Tracy! I had so much fun making your wedding cake and cupcakes! I wish you much happiness with your new groom!

Strawberry Cupcakes with Strawberry Buttercream

I am loving this gorgeous spring weather we are having here in Mobile...it's almost on the verge of summer and it's only March! There is nothing that goes better with these warm temperatures and bright sunshine than some fresh berries! I found some gigantic strawberries this weekend at the store, I mean huge....like 4 berries combined to make 1 monster berry! Although these berries are perfectly delicious and sweet all on their own I knew they would be even better made into some Strawberry Cupcakes with Strawberry Buttercream swirled on top.

These cupcakes pack a triple punch of strawberry. There is fresh strawberry puree in the batter and in the buttercream. And for a special touch and a slight hint of pick in the frosting I added some strawberry extract which really enhances the flavor! These cupcakes are light and moist and truly the perfect treat for an afternoon spent with friends.


I just got some fun decorating tools from Layer Cake Shop a few days ago so I was excited to try them out on the cupcakes. Since a girl can't have enough piping tips, I bought the French decorating tip for piping on the frosting and the Daisy Flower Plunger to make these adorable little fondant toppers. If you have never been to the Layer Cake Shop site, go check them out now for all kinds of amazing baking products! Their cupcake liners and sprinkle selection comes in every color imaginable...I'll take 1 of each please!


Strawberry Cupcakes with Strawberry Buttercream
makes 12 cupcakes

Ingredients
For the cupcakes:
-3/4 cup cake flour
-3/4 cup all-purpose flour
-1 tsp baking powder
-1/4 tsp salt
-1 stick unsalted butter, softened
-1 cup granulated sugar
-3 eggs (1 whole, 2 whites stiffly beaten)
-1/4 cup milk
-1 tsp vanilla extract
-1 cup fresh strawberries, pureed (1/3 cup puree for cupcakes, 3 Tbsp for buttercream)

  • Preheat oven to 350 degrees. Line cupcake pan with 12 paper liners.
  • In medium bowl combine flours, baking powder and salt.
  • In bowl of electric mixer beat butter and sugar on medium speed until creamy.
  • Add 1 egg and beat until combined.
  • Combine milk, vanilla and strawberry puree in small bowl.
  • Gradually add in flour mixture and strawberry mixture alternately, scraping down bowl after each addition.
  • In a small bowl beat 2 egg whites on medium speed until stiff peaks form. Gently fold egg whites into cupcake batter.
  • Spoon batter evenly into prepared pans about 2/3 full.
  • Bake for 16-18 minutes until toothpick inserted in center comes out clean.
  • Allow to cool on wire racks.
  • Frost with Strawberry Buttercream.
Strawberry Buttercream
-2 sticks unsalted butter, room temperature
-4 cups confectioners' sugar
-3 Tbsp strawberry puree
-1/2 tsp strawberry extract
  • In bowl of electric mixer beat butter until creamy.
  • Gradually add confectioners' sugar and continue to mix.
  • Add strawberry puree and strawberry extract and mix well.
  • Transfer icing to piping bag fitted with French decorating tip and swirl onto cupcakes.
